Ayurvedic Perspective on Buckwheat Flour
Buckwheat, also known as Kasha, is a seed that is becoming increasingly popular due to its gluten free qualities and nutritional benefits. They are high in protein, magnesium, manganese, essential amino acid and fibre. So delicious too! Similar to Quinoa and Amaranth, buckwheat is a pseudocereal, meaning it is a non-grass cereal.

Ayurvedic Qualities
Buckwheat is particularly beneficial for Kapha dosha, as it has qualities of drying and heating which balance the cold and wet qualities of Kapha. The diuretic qualities help to remove excess water in the body. Great for those who may feel a bit of water retention, congestion and sluggishness with the onset of Spring!

Those with a Pitta predominant constitution may want to use Buckwheat in moderation, as it can be too heating. Also, the light qualities of the grain can aggravate Vata dosha in excess but can be coupled with vata pacifying foods and spices such as Ghee and Vata Churna.

Benefits of Buckwheat
Buckwheat helps to control blood sugar, making it great for those with Diabetes. It also is known to aid weight loss, decreasing blood pressure and improving circulation.

How to use Buckwheat flour
Makes amazing pancakes! Just substitute the buckwheat flour and you’ll have a gluten free alternative for your recipes. Below is our favourite chapati recipe with buckwheat flour.

Buckwheat Chapati Recipe

Ingredients
* 2 cups of flour (we prefer equal parts of buckwheat, barley and spelt)
* 3/4 cup warm water
* 1-2 tablespoons of ghee or sesame oil
* Himalayan pink salt to taste
* Optional: Roasted cumin, fennel seeds and/or ajwain seeds

Mix all the dry ingredients and add warm water. Knead well until the dough is soft. Best if you let the dough rest for 30 minutes and knead again. Make large walnut size balls and roll them on a floured board until they become very thin. Heat a frying pan at medium to hot temperature and cook the chapatis on each side for about 30 seconds.
